Corn on the cob is a summer favorite and this recipe makes incredible corn slathered in a mayonnaise sauce and sprinkled with Mexican spice seasoning.

  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 6 ears corn
  • 3 tablespoons lime juice
  • 1 1/4 teaspoon chili powder
  • ¼ cup cilantro
  • ½ teaspoon garlic powder

Mix the mayonnaise, sour cream, lime juice, and garlic powder in a small bowl. Roast the corn on the oven rack with the oven set to 400 degrees F. Roast for 40 minutes. Peel the husks down and spread the corn with the mayonnaise mixture. Garnish with chili powder and cilantro.
