  • 1 turnip, peeled and cut into eighths
  • 1 celery root, peeled and cut into eighths
  • 2 lb. new potatoes, halved
  • 1 lb. shallots, peeled and halved
  • olive oil
  • salt and pepper, to taste

Toss the vegetables on a cookie sheet with oil and salt and pepper. Roast for 40 minutes at 350 degrees or until cooked through. If desired, you may drizzle with balsamic vinegar prior to roasting to add more flavor.
