Sometimes there doesn’t have to be a theme to your vegetable dish. All you need is your favorites and an olive oil rub with spices. This simple dish is great for quick throw together and a slow roast.

  • 3 stalks of asparagus
  • 1 zucchini
  • 4 large carrots
  • 2 sweet potatoes
  • 1 beet
  • ½ onion
  • ¼ C. olive oil
  • 2 T. rosemary
  • 2 ½ T. basil
  • 1 ½ T. garlic powder
  • 1 T. onion powder
  • 1 tsp. salt
  • 1 tsp. pepper

Preheat oven to 425 degrees and spray a baking dish with nonstick cooking spray. Clean and chop all the vegetables and place them in a very large bowl then pour olive oil over them. Mix until all vegetables are coated then add in seasonings and combine all again. Pour coated vegetables into greased baking dish, cover with foil, and cook for 30 minutes. Uncover when 30 minutes are up and bake for another 15 minutes or until vegetables are tender.
