Over The Moon Cheesy Orzo
Ingredients
- 2 Tbs. extra-virgin olive oil
- 1/2 sm. onion, chopped
- 2 14-oz. cans chicken or vegetable broth or stock
- 2 C. orzo pasta (enriched rice may be substituted)
- 1/4 - 1/2 C. grated Parmigiano or Romano – to taste
- pinch of salt
- 3 grinds black pepper
- 8 oz. low-fat ricotta cheese
- 1 pkg. frozen spinach, thawed and water squeezed out -or- 1 box frozen peas, defrosted
Directions
Preheat 8-inch pot and add oil, onion and saute for 2 or 3 minutes. Add broth to the pan and bring to a boil. Stir in orzo and return to a boil. Cover pot and reduce heat and simmer. Cook about 15 minutes, stirring frequently, or until liquid is absorbed and pasta is tender. If using the peas, add before last of the broth is absorbed. If using spinach, add with cheeses. Stir in cheeses and adjust salt and pepper to taste.
