What could be better than baguette slices soaked in an egg mixture that have been cooked in your crockpot into a warm, savory breakfast? We drench this classic breakfast dish with a sweet fruity topping made from strawberries and blueberries.

  • 1 12" Baguette
  • 8 Eggs
  • 2 C. Skim Milk
  • 1 tsp. Ground Cinnamon
  • 1 Tbs. + 1 tsp. Granulated Sugar, divided
  • 1/2 C. Fresh Strawberries, sliced
  • 1/2 C. Fresh Blueberries

Spray a large crockpot with nonstick cooking spray. Divide the baguette into 3/4" thick slices, and layer the slices in the crockpot. In a large bowl, beat together the eggs, milk, cinnamon, and 1 tsp. of sugar. Pour egg mixture over bread. Cook on warm for 8 hours or overnight. In a medium bowl, combine 1 Tbs. of sugar, strawberries, and blueberries. Let sit for 10 minutes before stirring together. Serve berry topping alongside the French toast.
