Ingredients

  • 2 T. butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 C. broccoli florets
  • 1 C. cooked ham, cubed
  • 1 red bell pepper, chopped
  • 4 eggs, beaten
  • 1 ½ C. mozzarella cheese, shredded
  • 1 unbaked pie crust
  • 1 ½ C. milk
  • Salt and pepper to taste

Preheat oven to 350 degrees. In a skillet, melt butter and sauté onion, garlic, broccoli, and bell pepper until softened. Transfer onto pie crust in a pie tin and sprinkle with mozzarella and ham. In a bowl, whisk together eggs, milk, salt, and pepper. Pour over vegetables and bake for 45 minutes until set.
