Lentils, tomatoes, onions, and cheese are all wrapped up in some delicious swiss chard leaves. This simple recipe is a perfectly light and tasty dish for any meal.

  • 1 Bunch of Swiss Chard
  • ½ Cup of Crumbled Feta Cheese
  • ½ Cup of Diced Onion
  • 2 Minced Garlic Cloves
  • 1 Cup of Lentils
  • 1 Cup of Chopped Heirloom Tomatoes
  • 1 Pinch of Salt (or more to taste)
  • 1 Pinch of Pepper (or more to taste)
  • 2 Tablespoons of Olive Oil
  • 1 Teaspoon of Oregano
  • 1 Teaspoon of Lemon Juice

Begin by heating 1 tablespoon of the oil in a pan over medium heat to cook the onions, garlic, salt, and pepper in for about 5 minutes. Then, add the lentils, tomatoes, oregano, lemon juice, and 2 cups of water to the mix and increase the heat to high until it simmers. After it simmers, bring the heat back down to low and let it simmer while you stir it occasionally for about 30 minutes.

Next, chop off the stems from the swiss chard and add them to the mix, stirring for another 5 minutes or so. Remove this mixture from the heat and ready your swiss chard by laying out the remaining leaves. Place a dollop of the mixture onto the center of half of the leaves and sprinkle the feta over top. Then, using another leaf, fold it over the mixture and wrap everything up into a little packet.
