Paleo Diet Beet Salad
Serving Size / Yield
- 2 Large Beets, chopped into cubes
- 2 Large Apples, chopped into cubes
- 2 Large Carrots, chopped into cubes
- 1 cup Pickled Mushrooms
- 2/3 cup Canola Oil
- 1/2 cup Vinegar
- 3 Pinches of Salt
- 2 tbs Sugar
In a sauce pan or pot, boil the beets and carrots until tender.
Place the apples and pickled mushrooms in a large dish.
Add the cooked vegetables.
Mix the canola oil, vinegar, sugar, and salt in a bowl.
Pour over the vegetables and fruit in the dish.
Toss a little to make sure everything it coated.
