This recipe is quick and easy and perfect for lunch or dinner! Sweet apples with carrots and beets, brought together by a light vinaigrette create a simple dinner recipe perfect for any occasion.

  • 2 Large Beets, chopped into cubes
  • 2 Large Apples, chopped into cubes
  • 2 Large Carrots, chopped into cubes
  • 1 cup Pickled Mushrooms
  • 2/3 cup Canola Oil
  • 1/2 cup Vinegar
  • 3 Pinches of Salt
  • 2 tbs Sugar

In a sauce pan or pot, boil the beets and carrots until tender.
Place the apples and pickled mushrooms in a large dish.
Add the cooked vegetables.
Mix the canola oil, vinegar, sugar, and salt in a bowl.
Pour over the vegetables and fruit in the dish.
Toss a little to make sure everything it coated.
