Pan Apple Cake

Whenever my aunt made a pan of this apple cake, it would be gone before we knew it! This recipe is more like a coffee cake that is moist and appetizing. It has a sweet apple and coffee taste to it.

Ingredients

  • 3/4 C. sugar
  • 1/2 C. shortening
  • 1 tsp. baking soda
  • 1/2 C. coffee
  • 1/3 C. brown sugar
  • 1 tsp. cinnamon
  • 1 egg
  • 1 1/2 C. flour
  • 2 C. apples, peeled, cored and finely chopped
  • 1/2 C. raisins (or nuts, optional)

Spray 9x13-inch baking pan with cooking spray. Preheat oven to 350 degrees. In a bowl, mix the first 7 ingredients until smooth. Then add flour. Add apples and nuts or raisins if desired. Pour into baking dish and bake for 45 minutes. When cooled, serve with whipped topping.
