  • 4 slices thick-cut bacon
  • 1 lb. (500 g) fingerling potatoes
  • Kosher salt and freshly ground pepper, to taste
  • 1 tbsp .garlic powder
  • 1 tsp. parsley
  • 1 tsp. dried dill
  • 2 Tbs. olive oil

Combine the potatoes with salted water to cover by 1 inch in a large saucepan, and bring to a boil over high heat. Bring the heat to medium and simmer the potatoes until they are just tender.
While the potatoes are boiling, set a frying pan to medium-high heat and cook the bacon until crispy. Then, cut the bacon into 1-inch thick pieces. Turn off the heat and set the frying pan aside.
When the potatoes are tender, drain out the excess water and let cool until cool. Then, cut the potatoes in half lengthwise.
While the pan is still hot, add the olive oil and set again to medium-high heat. Next, add in the potatoes and cook for 5 to 7 minutes with the salt, pepper, and garlic powder. Add in the bacon pieces, and lightly toss the mixture to combine. Season to taste with parsley and dill and serve immediately.
