  • 1 lb. store-bought gnocchi
  • 2 Tbs. olive oil
  • 1/2 medium onion, diced
  • 1 Tbs. chopped garlic
  • 1 (28-oz) can diced tomatoes
  • 2 Tbs. chopped fresh basil leaves
  • 2 Tbs. chopped fresh parsley leaves
  • Salt
  • black pepper
  • freshly grated parmesan cheese
  • basil

Prepare gnocchi according to box instructions, cooking for 3 minutes less than recommended.
Meanwhile, in a medium pot heat olive oil over medium heat. Add onion and garlic and saute for 3 minutes. Add remaining ingredients and simmer for another 15 minutes.
Once gnocchi is almost cooked, remove from water. Add olive oil to a large skillet and heat on medium-high. Add the gnocchi and pan fry on each side to lightly brown each side. Remove when desired crispiness is reached.
Plate gnocchi and pour sauce over. Add freshly grated parmesan and a few leaves of basil.
Serve immediately.
