  • 1 lb. Brussels sprouts, halved and cored
  • olive oil
  • 2 Tbs. garlic, minced
  • 2 tbs. black peppercorns, roughly chopped
  • 8 strips applewood smoked bacon
  • salt, to taste
  • 1/3 c. roasted red peppers, finely chopped

Cook and drain bacon in the microwave. Chop and set aside. Heat a large cast-iron skillet over medium-high heat until shimmery. Add garlic and red peppers and cook until fragrant, 2-4 minutes. Turn heat to high and stir peppers and onions for 30 seconds. After 30 seconds, add the Brussels sprouts. Do not stir for 6 minutes. After 6 minutes, stir to flip and cook for another 5 minutes. Add peppercorns and bacon. Toss, remove from heat after 30 seconds, and serve. Season with salt as desired.
