  • 1 3/4 C. flour
  • 2 T. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 eggs
  • 1 C. milk
  • 1 C. sour cream
  • 1 stick butter, melted
  • 1/2 tsp. vanilla
  • 1 1/2 C. fresh or frozen blueberries
  • 1/2 tsp. lemon zest

In a large bowl, sift together flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together eggs, milk, sour cream, half of the butter, and vanilla. Form a well in the center of the dry ingredients and pour the egg mixture to combine. Whisk until just blended. Fold in blueberries and lemon zest. Use remaining melted butter to grease your skillet in batches over medium heat. Spoon batter into desired pancake size and cook until golden brown on each side. Serve immediately.
