Inspired by the flavors of Panera's Fuji Apple Chicken Salad, we've created a sweet and crisp dish full of fresh fruits and veggies. Tender pieces of chicken sit atop a bed of salad greens mixed with juicy cucumbers and tomatoes, pungent onions, and crunchy apples.

  • 1/2 C. + 1 Tbs. Extra-Virgin Olive Oil, divided
  • 2 Boneless Skinless Chicken Breasts
  • 1/2 tsp. Sea Salt, plus additional to taste
  • Ground Black Pepper, to taste
  • 1 10 oz. bag Salad Greens
  • 2 C. Fuji Apples, cut into wedges
  • 1 C. Cucumber, halved lengthwise and sliced
  • 1 C. Tomato, chopped
  • 1 Small Onion, peeled and thinly sliced
  • 1/2 C. Radishes, thinly sliced
  • 1/4 C. Apple Cider Vinegar
  • 2 Tbs. Honey
  • 1/8 tsp. Garlic Powder
  • 1/2 C. Seedless Raisins

Warm 1 tablespoon of olive oil in a large skillet over medium heat. Season both sides of the chicken breasts with salt and pepper to taste. Cook chicken for 4 minutes on each side, or until cooked through and tender. Remove and let rest for 5 minutes before cutting into strips. In a large mixing bowl, combine the salad greens, apples, cucumber, tomato, onion, and radish. In a small bowl, whisk together the remaining olive oil, vinegar, honey, garlic powder, and 1/2 teaspoon of salt. Drizzle vinaigrette over the salad and toss to coat. Place the salad on a serving dish. Top with chicken slices and sprinkle with raisins before serving.
