Panera-Inspired Egg, Potato And Sun-Dried Tomato Salad

- 6 C. Spring Mix Lettuce
- 3 potatoes
- 2 tomatoes
- 1 C. sundried tomatoes
- 4 eggs
- 1 ½ C. red wine vinaigrette
Place eggs in a pot and cover by 1 inch with water and bring to a boil, then cover and remove from heat for about 10 minutes. Drain with cold water and peel. Bring water in a medium saucepan to a boil. Put potatoes in the pan then reduce heat and simmer, covered, for 20 minutes or until potatoes are soft.
Cut eggs and potatoes into smaller chunks and place over bed of lettuce. Cut tomatoes into smaller wedges and sprinkle over salad along with sundried tomatoes.
Serve with red wine or raspberry vinaigrette.
