  • 4 C. corn kernels
  • 1 C. half and half
  • 2 small potatoes
  • 5 C. vegetable broth
  • 3 Tbs. flour
  • 2 Tbs. olive oil
  • 2 Tbs. unsalted butter
  • 1 onion
  • ½ C. shaved parmesan cheese

Heat butter with olive oil in a small large saucepan over low heat. Add chopped onion and cook for about 10 minutes. Add flour by teaspoon and cook for another 5 minutes.
Add broth, cheese and ¼ inch potato wedges to the pot and bring to a boil.
Reduce heat to medium and cook, covered for 10 minutes. Add corn, half and half, and a dash of salt and pepper. Cook for additional 8 minutes, stirring occasionally.
Serve in soup bowls and garnish with extra corn kernels.
