- 2 cup Panko Bread Crumbs
- 2 Tbsp Dried Italian Seasoning
- 1 Tbsp Garlic Powder
- 3 Tbsp Olive Oil
- 1 Tbsp Salt & Black Pepper, divided
- 6× 6-oz Cod, cut in half to make 12 pieces
Preheat oven at 350.
In a mixing bowl combine panko bread crumbs, Italian seasoning, garlic powder, 1 tablespoon olive oil, 1/2 tablespoon each salt and black pepper.
Pat fish dry with a paper towel, then sprinkle with remaining salt and black pepper, then dip each piece of cod into the bread crumb mixture.
Place cod on a baking sheet lined with parchment paper, drizzle with remaining olive oil and bake 15-25 minutes.
