Panko bread crumbs add a nice extra crunch that you're going to love! The outside of this pan-fried tilapia is crispy while the inside is nice and flaky.

  • 1/2 tsp. garlic powder
  • 1/2 tsp. kosher salt
  • 1/4 tsp. freshly ground black pepper
  • 4 tilapia fillets
  • 3/4 C. buttermilk
  • 1 1/2 C. panko bread crumbs
  • 4 1/2 tsp. extra virgin olive oil

Cut tilapia fillets in half, lengthwise. Season fish with garlic powder, salt and ground black pepper. Pour buttermilk in a shallow dish. Add bread crumbs to a separate dish. Dip fish into buttermilk and then gently roll in bred crumbs.

Warm half of oil in a large skillet over medium-high heat. Add half of fish to skillet and cook for 4 minutes or until flaky and golden brown. Remove from heat and set on paper towel to drain. Add remaining oil to skillet and repeat steps with remaining fish.
