Ingredients
- 1 lb. beef stew meat
- 1 onion, diced
- 2 stalks celery, chopped
- 2 carrots, peeled and sliced
- 1 yellow bell pepper, chopped
- 1 red bell pepper, chopped
- 1 C. mushrooms, sliced
- 2 large potatoes, peeled and chopped
- 2 T. butter
- 2 T. flour
- 2 T. tomato paste
- 2 T. Worcestershire sauce
- 2 C. beef broth
- 2 tsp. thyme
- 1 T. paprika

Directions
Preheat oven to 325 degrees. In a large pot, melt butter and sauté onion, celery, carrots, bell peppers, mushrooms, and potatoes until softened. Stir in flour until dissolved and add tomato paste, Worcestershire, beef broth, paprika, and thyme. Bring mixture to a simmer, add in beef, and transfer to a casserole dish. Cover and cook for 1 to 2 hours until beef is tender.
