  • 6 bell peppers, any color
  • 1 onion, diced
  • 1 T. olive oil
  • 1 lb. ground turkey
  • 1 T. paprika
  • 1 tsp. oregano
  • Dash cumin
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 ½ C. cooked quinoa
  • 1 C. mozzarella cheese

Preheat oven to 325 degrees. Cut the tops of the peppers off and discard seeds. In a saucepan, boil peppers for 5 minutes, drain, and set aside. In a skillet, heat oil and brown turkey until no longer pink. Add in onion and garlic, sauté until tender, and season with paprika, oregano, cumin, salt, and pepper. Remove from heat and stir in quinoa and mozzarella. Stuff peppers with mixture, place on a baking sheet, and bake for 20 to 25 minutes until bell peppers are tender.
