Artichoke, bacon and parmesan make up this scrumptious casserole.

  • 4 artichokes
  • 3 Tbs. flour
  • 1 egg, lightly beaten
  • 1 C. olive oil
  • 2 slices bacon, chopped
  • 1 sm. onion, sliced
  • 3 Tbs. tomato paste
  • 1 C. warm water
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 4 Tbs. grated parmesan cheese
  • 2 Tbs. butter

Cut off stalks and tips of artichokes and remove tough outer leaves. Cut into very thin slices, roll in flour and in egg and fry a few slices at a time in olive oil. Brown bacon and onion in small saucepan, add tomato paste, water, salt and pepper and cook for 10 minutes. Place a layer of fried artichoke slice in greased casserole. Cover with some of sauce, sprinkle with some of the cheese. Dot with butter and repeat layers until all artichokes are used. End with a layer of cheese. Bake in oven at 375 degrees for 20 minutes.
