  • 1 ½ lb. Brussels sprouts, halved
  • 3 T. butter
  • 3 T. flour
  • 1 ½ C. milk
  • Salt and pepper to taste
  • ¼ C. mayonnaise
  • 1 ¼ C. Parmesan cheese, grated

Preheat oven to 350 degrees. Bring a large pot of water to a boil, add Brussels sprouts, and blanch them while stirring for 2 to 3 minutes until they are bright green. Drain and set aside. In a large skillet, melt butter and whisk in flour; remove from heat and stir in milk, salt, pepper, mayonnaise, and Parmesan until completely melted. Add Brussels sprouts and toss to evenly coat. Transfer to a greased casserole dish and bake for 45 minutes until sprouts are tender.
