  • 2 T. vegetable oil
  • 6 C. whole corn kernels
  • salt and pepper to taste
  • 3/4 C. heavy cream
  • 1/4 C. chicken stock
  • 1 C. grated Parmesan cheese

In a large skillet, heat oil over medium heat for two minutes. Add corn and stir occasionally for eight minutes. Slowly pour in cream and stock. Stir constantly until mixture thickens. Remove from heat and season with salt in pepper. Stir in Parmesan and transfer to a serving dish.
