Ingredients
- ½ C. flour
- ½ tsp. cayenne pepper
- ½ tsp. ground nutmeg
- 2 eggs, beaten
- 1 T. lemon juice
- 1 C. Parmesan cheese, grated
- 1 C. bread crumbs
- 4 boneless pork cutlets, pounded thin
- Salt and pepper to taste
- Vegetable oil for frying

Directions
Heat oil in a large skillet until shimmering. Season pork cutlets generously with salt and pepper. In one bowl, combine flour, cayenne, and nutmeg. In a second, whisk egg and lemon juice. In a third, add bread crumbs and Parmesan. When oil is ready, dredge cutlets in flour, dip into egg mixture, and coat with bread crumbs. Add to oil and fry for 3 to 4 minutes on each side until golden brown.
