  • 2 C. cooked ham, chopped
  • 1 large zucchini, peeled and sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • Salt and pepper to taste
  • 1 C. Parmesan cheese, shredded

Directions

Preheat oven to 350 degrees. In a large bowl, toss zucchini slices with salt and pepper; set aside for 10 minutes. In a greased baking dish, add ham to the bottom and top with layers of zucchini and bell peppers. Sprinkle on Parmesan, cover, and bake for 30 minutes. Uncover and continue baking for 15 to 20 minutes until golden on top.
