  • 1 (10 oz.) package fettuccine, cooked and drained
  • ¼ C. pine nuts
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1 C. fresh basil leaves
  • ¼ C. parsley leaves
  • 2 tsp. lemon juice
  • 1/3 C. extra virgin olive oil
  • ¼ C. Parmesan cheese, shredded

In a food processor, pulse pine nuts until finely chopped. Add in salt, pepper, garlic, basil, and parsley; blend until smooth and well-combined. Drizzle in oil, lemon juice, and cheese; pulse to combine. If pesto is too dry, add a little more oil at a time. Toss fettuccine in pesto and serve with additional Parmesan on top.
