Parmesan Parsley Stuffed Mushrooms

Ingredients
- 12 large white mushroom caps
- 1 tsp. olive oil
- 2 cloves garlic, minced
- 1 C. breadcrumbs
- 1 C. Parmesan cheese, grated
- 3 T. fresh parsley, chopped
- Salt and pepper to taste
- 3 T. butter, melted

Directions
In a skillet, heat oil and sauté garlic for 2 to 3 minutes. Remove from heat and stir in breadcrumbs, Parmesan, parsley, salt, and pepper. Stuff mushroom caps with mixture, drizzle with melted butter, and bake at 400 degrees for 10 to 15 minutes until heated through.
