  • 1 lb of tagliatelle pasta
  • 3 tbsp Olive oil
  • 2 tsp butter
  • 2 cloves of garlic, minced
  • 2 cups fresh spinach, sliced fine
  • Garlic salt and pepper to taste
  • ¾ Cup heavy cream
  • 1 Cup mascarpone cheese
  • 12 ounces of cream cheese
  • 1⁄3 cup sour cream

Boil water in a medium pot, and add pasta. Cook according to the instructions.
Meanwhile, warm your skillet and drizzle with of olive oil over the entire surface of the pan. Once done, add the butter and garlic.
Once your butter is melted and bubbling, add your spinach. Let it simmer for about 5 minutes. Watch the spinach wilt and become dark and buttery. Once your spinach is cooked and saturated, sprinkle with garlic salt and pepper to taste.
Once your spinach is seasoned, add your heavy cream, sour cream, cream cheese, and a dash of warm water. Mix this, and allow it to simmer and then season again. While simmering, you can feel free to season again.
As your spinach simmers, drain your pasta. Once this is done, stir it into your sauce. Once the pasta has absorbed the sauce, add your Parmesan and toss everything together.
Take your skillet off of heat and serve.
