  • 1 head cauliflower
  • 1 sliced onion
  • 5 garlic cloves
  • ½ cup grated parmesan
  • 3 tablespoons olive oil
  • Salt and pepper

Cut the cauliflower into florets and toss with the onion slices, garlic, and olive oil on a rimmed baking sheet. Season with salt and pepper. Roast for 40 minutes at 425 degrees. Toss occasionally while roasting. Sprinkle the cauliflower with the cheese, toss, and roast for 10 additional minutes.
