  • 2 (15 oz.) cans garbanzo beans
  • 3 Tbs. lemon juice
  • 6 cloves garlic
  • 1/2 tsp. kosher salt
  • 1/2 tsp. fresh ground black pepper
  • 1/4 C. Parmesan cheese, grated
  • 6 Tbs. olive oil
  • 3 Tbs. sun dried tomatoes, chopped

Place beans, lemon juice, garlic, salt, pepper and Parmesan cheese in a food processor. Blend well. Drizzle olive oil. Mix until smooth. Place oil in skillet over medium heat. Saute 1 Tbs. garlic and add tomatoes until tender. Pour hummus in bowl with pita chips.
