  • 3-4 boneless chicken breasts
  • Salt and pepper to taste
  • ½ lb. bacon
  • 1 onion, diced
  • 2 stalks celery, chopped
  • 2 carrots, peeled and chopped
  • 4 cloves garlic, minced
  • ½ C. white wine
  • 1 C. Northern white beans
  • 1 tsp. thyme
  • 1 C. chicken broth
  • 1 tomato, chopped
  • ¾ C. grated Parmesan

Preheat oven to 350 degrees. In a skillet, cook bacon until crispy, remove, and set aside. Add chicken to skillet with bacon grease and brown on both sides; remove and set aside. Add in onion, celery, carrots, and garlic; sauté until tender and pour in wine. Simmer until wine reduces by half, stir in beans, and season with thyme. In a greased casserole dish, add chicken, bacon, vegetable mixture, and chicken broth. Tom with tomatoes and Parmesan. Cover with foil and bake for 20 minutes. Uncover and bake for an additional 10 to 15 minutes.
