  • 2 medium zucchini
  • 1 Tbs. oil
  • 1/4 C. grated Parmesan
  • 1/4 C. plain bread crumbs
  • 1/8 tsp. salt

Heat the oven to 450 degrees and grease a baking sheet. Slice the zucchini into thin rounds and toss with the oil in a bowl. In another bowl, combine the Parmesan, bread crumbs, salt, and a little pepper. Dip each slice of zucchini into the Parmesan mix, coating evenly and pressing to make it stick. Place the slices on the greased baking sheet and bake for 25 to 30 minutes, or until the rounds are browned and crispy.
