Parsley Garlic Ribbons with Garbanzos, Olives and Artichokes

Ingredients
- 2 pkgs. Eden Organic Parsley Garlic Ribbons
- 1/4 C. Eden Selected Extra Virgin Olive Oil
- 1/4 tsp. red pepper flakes, or to taste
- 1 C. onion, diced
- 6 cloves garlic, diced
- 1 C. artichoke hearts, packed in water, quartered
- 1 med. yellow pepper, chopped
- 2 C. organic vegetable broth
- 1 C. pitted black olives, whole
- 1 can Eden Organic Garbanzo Beans, drained
- 1 can Eden Organic Whole Tomatoes with Basil, chopped
- 1/2 tsp. Eden Sea Salt
- Freshly ground black pepper
- 1 Tbs. fresh parsley, minced

Directions
Cook pasta according to directions until al dente. While the pasta is cooking place olive oil, red pepper flakes and onions in a large skillet and sauté on medium until golden. Add garlic, artichokes and yellow pepper, sauté until just browned. Add broth, olives, garbanzos and tomatoes. Gently simmer 5 minutes. Place drained pasta in a large bowl, pour sauce over and toss.
