  • 1 lb. parsnips
  • 3 Tbs. flour
  • 1 egg
  • 1 Tbs. sugar
  • 2 Tbs. green onion, chopped
  • salt and pepper, to taste
  • olive oil

Peel and cube parsnips.  Boil in salted water until tender.  Drain and then mash.  Combine parsnips with flour, egg, sugar, green onion, salt, and pepper.  In a heavy frying pan, heat enough olive oil to coat bottom.  Saute patties until golden brown on each side using 3-4 Tbs. of batter for each. Flatten each patty to about 1/2 inch.  Drain well on paper towels.

Serve with: Roast Pork with Rosemary and Garlic
