Potatoes are great on their own but mix in some garlic and parsnips and the dish becomes something entirely new. This easy recipe is perfect to have in the oven while you cook the rest of your meal. It’s a simple dice, dress, bake side dish that’s ready in just over an hour.

  • 4 potatoes, diced
  • 3 parsnips, diced
  • 4 T. sunflower oil
  • 2 head of garlic, split into cloves

Heat the oven to 400 degrees and bring a large pot of water to a boil. Boil the potatoes and parsnips for about 3-5 minutes then drain and keep separate. Pour the oil in a roasting pan and let it heat in the oven for about 5 minutes. Pour the potatoes into oil carefully and mix until potatoes are coated. Let the potatoes bake for 25 minutes then add in the parsnips and garlic, again mixing them in the oil. Bake the whole pan for another 30 minutes and when parsnips are tender take out of the oven and serve.
