Ingredients
- 8 veal cutlets, about 3 oz. each
- 6 Tbs. soft bread crumbs
- 2 garlic cloves, minced
- 1 Tbs. olive oil
- 1 Tbs. finely chopped fresh parsley
- 8 thin slices prosciutto
- 8 thin slices fontina cheese
- 1 C. chicken stock
- 1 C. tomato sauce
- 1/2 C. dry red wine
Directions
Preheat oven to 350 degrees. Pound veal cutlets between two sheets of wax paper until flattened to 1/4-inch thickness. In a small bowl, combine bread crumbs, garlic, olive oil and parsley. Blend well. Place veal on a flat work surface. Cover each piece with a slice of prosciutto. Sprinkle with about 1 Tbs. bread crumb mixture and top with slice of cheese. Roll up veal and fasten with toothpicks. Place in baking a baking dish. In a nonreactive small saucepan, combine stock, tomato sauce and red wine. Pour around veal. Cover with foil. Bake 40-50 minutes, turning once or twice, until tender. Remove picks. Serve.
