  • 1/4 C. salad oil
  • 1 lg. green pepper, cut in strips
  • 1/4 C. all-purpose flour
  • 1/4 tsp. pepper
  • 2 cans solid-pack tomatoes
  • 2 lbs. fresh shrimp, shelled and deveined
  • 2 med. onions, sliced
  • 1/4 lb. mushrooms, sliced
  • 1 tsp. salt
  • 1 tsp. oregano, to taste

Heat oil. Add onions, green pepper and mushrooms. Cook until vegetables are tender, stirring occasionally. Add flour and seasonings. Mix well. Add tomatoes. Cook, stirring constantly, until thickened. Cover and cook over low heat for 10 minutes. Add shrimp. Cook 3-5 minutes.
