Ingredients

  • 1 12-oz. box Eden Foods Kamut Spirals
  • 1 1/2 lbs. boneless, skinless chicken breast, cut into bite-size pieces
  • 2 tsp. olive oil
  • 4 C. sliced mushrooms
  • 2 C. frozen, sliced, mixed sweet peppers
  • 4 Tbs. pesto
  • 3 Tbs. basil
  • 1 1/2 C. chicken broth
  • 1 8-oz. pkg. low fat cream cheese
  • 1 C. tomatoes, diced

Directions

Preheat oven to 375 degrees. Cook pasta as directed on package. Keep warm. Cook chicken in oil 3-4 minutes. Remove from pan and put in bowl. In same pan, saute peppers and mushrooms for 3-4 minutes. Stir in pesto and basil. Add broth and cream cheese. Stir until cheese melts. Stir in pasta and chicken. Put in a 9x13-inch pan and bake for 15 minutes in oven or until heated through. Gently stir in tomatoes.
