Pasta and Fresh Tomato Sauce
- 4 oz. dried rotini or fusilli
- 2 C. coarsely chopped plum tomatoes
- 2 tsp. olive oil
- 1/4 tsp. salt
- 3 Tbs. shredded fresh basil
- 1/4 C. shaved Parmesan cheese
- 1/4 tsp. pepper
Cook the pasta according to package directions; drain.
Meanwhile, in a saucepan combine tomatoes, olive oil and salt. Cook over medium-low heat until heated through and tomatoes start to juice-out slightly. Stir in basil.
Divide pasta among 4 plates. Top each serving with some of the tomato mixture. Sprinkle with cheese and pepper.
