  • 1 tsp. olive oil
  • 3 garlic cloves, minced
  • 1 shallot, minced
  • 2 pkg. chicken tenderloins, chopped into 1" pieces
  • 1 box spiral pasta
  • 1 can evaporated milk
  • 3 Tbs. whole milk
  • 1/2 pt. heavy cream
  • 2 Tbs. butter
  • 1 (8-oz.) pkg. Mozzarella, shredded
  • 2 tsp. salt
  • 2 tsp. pepper

Preheat oven to 350 degrees F. Add olive oil and garlic on sauce pan over medium heat and cook for 5 minutes. Add chicken and cook fully. Boil pasta according to package directions. Drain pasta. In another saucepan, add milks, cream and butter. Bring to simmer and add cheese. Combine with chicken and garlic mixture. Pour in extra large casserole dish along with pasta. Bake for 50 to 55 minutes.
