Pasta E Fagioli
Ingredients
- 1 C. elbow macaroni
- 1 14.5-oz. can diced tomatoes with seasonings (if desired)
- 4 C. chicken broth
- 1 lb. spicy Italian sausage
- 1 15-oz. can cannellini beans, drained and rinsed
- 1/3 C. grated fresh Parmesan cheese
Directions
Cook pasta and set aside after draining. In a stockpot, combine the canned tomatoes with their juice and 4 cups broth. Bring to a boil, reduce heat and simmer for 10 minutes. Fry sausage until cooked through, drain and add to soup. Add beans, stir and simmer. Add pasta to soup and stir. Ladle into bowls and top with grated cheese.
