Pasta Lentil Soup

Ingredients
- 2 Tbs. olive oil
- 1 med. onion, chopped
- 1 celery rib, chopped
- 2 med. carrots, peeled and chopped
- 8 oz. lentils
- 8 C. reduced-sodium canned broth
- 1 tsp. marjoram
- 1/2 tsp. pepper
- 8 oz. spaghetti, broken
- salt
Directions
In a large saucepan, heat olive oil over medium heat. Add onion, celery and carrots and cook, stirring occasionally for 5 minutes. Add lentils, stock, marjoram and pepper. Bring to a boil, then reduce heat to low, cover and simmer for 30-45 minutes. Meanwhile, in a large saucepan, cook spaghetti until tender but still firm for about 10 minutes. Drain and rinse under cold running water. When soup is almost done, add spaghetti and simmer 5-10 minutes.
