Pasta with Avocado and Lemon Sauce

Ingredients
- 2 C. lg. pasta shells
- salt
- pepper
- 1/4 C. oil and vinegar dressing
- 1 lg. ripe avocado
- juice and grated rind 1 lemon
- 1 garlic clove, finely chopped
- 2 tsp. sugar
- 3-4 Tbs. stock or milk
- 4 scallions, chopped
- 2 Tbs. chopped parsley
Directions
Cook the pasta shells in boiling, seasoned water until tender. Drain thoroughly and, while still warm, toss lightly in the oil and vinegar dressing. Cut the avocado in half, discard the pit and scoop out the flesh. Mix the flesh with the lemon juice, lemon rind, salt and pepper, garlic, sugar and stock/milk. Then blend until smooth, in either a blender or by pushing the mixture through a strainer or food mill. Stir in the scallion and parsley, and then stir the avocado and lemon sauce into the pasta.
