Pasta with Marinara
Ingredients
- 1 lb. pasta, cooked
- 2 Tbs. extra-virgin olive oil
- 3 to 4 garlic cloves, minced
- 1 medium onion, finely chopped
- one 28-oz. can pureed tomatoes
- one 14 to 16-oz. can diced tomateos
- one 14 to 16-oz. can tomato sauce
- 1/4 C. dry red wine
- 2 tsp. Italian seasoning
- 2 C. well-cooked, pureed vegetables
- salt and pepper to taste
Directions
Cook noodles until al dente and drain.
Heat oil in sauce pan. Add garlic and onion, and saute until golden. Add tomato puree tomatoes, tomato sauce, wine, seasoning, and vegetable puree, and bring to a simmer. Cover and simmer very gently for 30 minutes. Season with salt and pepper and serve over hot pasta.
