Pasta with Marscapone and Walnuts

  • 1 lb. pasta shells (conchiglie)
  • 2 Tbs. butter
  • 1/2 lb. mascarpone cheese
  • 1/3 C. freshly grated Parmesan cheese
  • 12 C. chopped walnuts
  • Coarse salt and freshly ground pepper to taste

Cook the pasta shells until they are al dente. The time will vary according to the kinds of shells. Meanwhile, melt butter in a saucepan big enough to hold the pasta. Add the mascarpone and heat gently until melted. When pasta is cooked, drain and add to the mascarpone. Add the Parmesan cheese and walnuts. Toss thoroughly, season with salt and pepper and serve.
