Pastina Soup
Ingredients
- 1 1/2 lb. stew beef, ground beef or italian sausage, browned
- 1 lb. orzo pasta, half cooked
- 1 8 oz. can tomato sauce
- 1 14 oz. can tomatoes
- 2 boxes or 3 cans beef broth
- 3 C. water
- 2 carrots, cut into bite size pieces
- 2 celery stalks, cut into bite size pieces
- 1 medium onion roughly chopped
- 3 medium red or white potatos
- 1 Tbs. minced or pressed garlic
- 2 tsp. pepper
- Salt to taste
Directions
Basically you stir together all ingredients and simmer on the stove on medium-low for 45 minutes, stirring occasionally. If you want to do the crockpot version, stir in fully cooked pasta 20-30 minutes before you want to eat.
