Peach and Mascarpone Parfait

Ingredients
- 1 8-oz. C. mascarpone
- 1/4 C. sugar
- 1 Tbs. lemon juice
- 1 C. cold whipping cream
- 3 peaches, cut into bite-size pieces
- 1/3 C. amaretto
- 8 amaretti cookies, crushed into crumbs
- 2 Tbs. sliced almonds
Directions
Twenty minutes before you want to make the dessert, put a large bowl and electric mixer beaters in the refrigerator. When you're ready, whisk together the mascarpone, sugar and lemon juice in a medium bowl. Remove the bowl and beaters from the fridge. Pour cream into the chilled bowl and whip the cream at high speed until it holds it shape, 4 minutes. Use a spatula to gently fold the whipped cream into the mascarpone mixture. In a medium bowl, toss the peaches and amaretto together. Spoon half of the cream into 6 parfait glasses. Make a layer of the peaches, then sprinkle with the cookie crumbs. Top with the rest f the cream. Cover and chill in the fridge for up to 2 hours. Sprinkle with nuts before serving.
