Peach Bread

A wonderful recipe given to me by a friend. Hope you enjoy it as much as my family has.

  • 2 C. peaches, peeled and chopped
  • 1/3 C. sugar
  • fresh fruit (any kind)
  • 1 1/3 C. oil
  • 2 C. sugar
  • 1 tsp. baking powder
  • 3 C. flour
  • 3 eggs
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 C. chopped nuts (walnut or pecans)

Peel and cut up peaches to make 2 cups, add 1/3 cup sugar with a little fresh fruit and set aside.

Mix with electric mixer: sugar, oil and eggs. Sift flour, baking soda, baking powder, cinnamon and salt. Add sugar, oil and eggs. If too thick, add juice from peaches. Blend in peaches and nuts. Pour into 2 greased loaf pans. Bake at 350 degrees for 1 hour or until toothpick comes out clan. (Canned peaches can be used.) Can be frozen.
