Peach bread pudding made with brioche bread is fantastic, and actually feels a lot lighter than your usual bread pudding. It's also a perfect dessert recipe to serve at potlucks; we like ours a la mode!

Ingredients

  • 3 eggs, separated
  • 2 C. heavy cream, hot
  • 6 slices Brioche, day old
  • 1 C. peaches, diced (you can also use peach pie filling, if desired)
  • 2 tsp. cinnamon
  • 1/2 C. sugar
  • whipped cream, for topping

Directions

Preheat your oven to 350 degrees.  Cut bread into chunks bread and soak in the hot milk. 

Mix the yolks with the sugar until they form a cream. In another bowl, beat the whites of the eggs until they form stiff peaks. Fold gently into the bread and milk with the remaining ingredients. 

Bake in a greased 8x12 baking dish for 45 minutes or until hot throughout. Serve warm and top with whipped cream, if desired.
