A great summertime dessert when peaches are in season.

Ingredients

  • 1/2 C. sugar
  • 1 Tbs. cornstarch
  • 1/2 tsp. cinnamon
  • 4 C. sliced fresh peaches
  • 1 tsp. lemon juice
  • 1 C. flour
  • 2 Tbs. sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp. salt
  • 3 Tbs. butter, softened
  • 1/2 C. milk

Directions

Preheat oven to 400 degrees. In a large saucepan, mix the sugar, cornstarch and cinnamon. Fold in peaches and lemon juice. Cook, stirring, until the contents boil and it thickens. Boil for about 1 minute. Pour the contents of the saucepan into a shallow 2-quart casserole dish. Meanwhile, combine flour, sugar, baking powder and salt. Cut in the butter. Blend until fine crumbs are formed. Mix in the milk. Drop the dough onto the hot peaches in six very large spoonfuls. Bake the cobbler for 30 minutes or until the topping is a golden brown. This is delicious served with whipped cream or ice cream.
